What do you need for 12 cakes?
- 100 grams of self-raising flour
- 200 grams of buckwheat flour
- 1 tl baking powder
- 2 ripe bananas
- 100 grams of butter (soft)
- 150 grams grated carrot
- 125 ml almond milk
- 3 tbsp applesauce
- For garnish: cottage cheese and fruit

This is how you make it:
- Preheat the oven to 180 degrees.
- Sift the self-rising flour finely and add the buckwheat flour and baking powder above a bowl and mix together.
- Add the bananas, butter, grated carrot, almond milk and applesauce to a blender and blend until you have an even, orange-colored mixture.
- Stir this briefly into the flour so that everything is well mixed and divide the mixture over the cupcake tins.
- Bake the carrot muffins for 20-15 minutes and let them cool well.
- Just before serving, garnish the healthy muffins with a scoop of cottage cheese and some fresh fruit to make the taste extra fresh!
